  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder (Dutch-process preferred)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon espresso powder (optional)
  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract (for icing)
  • Candy eyes (optional)

Instructions

  1. Melt the butter in a large microwave-safe bowl in 20-second intervals until just melted. Set aside to cool for about 5 minutes.
  2. Add granulated sugar and brown sugar to the melted butter and whisk until combined. Add egg and vanilla extract and whisk vigorously until smooth and slightly lighter in color, about 1 minute.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder (if using).
  4. Add dry ingredients to wet ingredients and stir with a spatula until just combined. Do not overmix.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 3 days).
  6. Preheat oven to 350ยฐF and line two baking sheets with parchment paper.
  7. Scoop dough into 1.5-tablespoon balls and roll smooth. Place 2 inches apart on prepared baking sheets.
  8. Bake for 9 to 11 minutes. Cookies should look puffed and slightly cracked on top. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  9. For the icing: whisk together powdered sugar, milk, and vanilla extract until smooth. Icing should be thick but pipeable.
  10. Transfer icing to a piping bag or zip-top bag with a tiny corner snipped off. Pipe a spiral from the center of each cookie outward.
  11. Drag a toothpick from the center outward through the spiral lines to create the web effect. Wipe toothpick clean between each cookie.
  12. If using candy eyes, place a small dot of icing on the back of each eye and stick onto a chocolate candy or small piece of cookie. Place spider on the web while icing is still wet.
  13. Let cookies sit at room temperature for about 30 minutes until icing is firm.

Notes

Chilling the dough is essential to prevent spreading. For best results, chill for at least 30 minutes. The icing should be thick but pipeable; test on a paper towel first. Cookies taste even better the day after baking.
