  • 1/2 cup (about 85g) chocolate melting wafers (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick cooking spray.
  2. In a large pot over medium-low heat, melt 3 tablespoons unsalted butter until fully melted but not browning, about 2 minutes.
  3. Add 6 cups mini marshmallows and stir constantly until completely melted and smooth, about 3-4 minutes. Keep heat on medium-low to avoid scorching.
  4. Remove pot from heat. Stir in 1 teaspoon vanilla extract, a pinch of salt, and 1/2 teaspoon neon green gel food coloring until color is even.
  5. Pour in 6 cups crispy rice cereal and fold gently until all cereal is coated. Work quickly as mixture sets fast.
  6. Scrape mixture into prepared pan. Spray spatula with cooking spray and press into an even layer—don’t press too hard.
  7. Let treats cool at room temperature for 20-30 minutes until set but still slightly warm.
  8. While treats cool, microwave chocolate melting wafers in a small bowl in 20-second bursts, stirring between each, until smooth (about 60-90 seconds total).
  9. Lift treats from pan using parchment. Cut into 12-15 rectangles. Dip candy eyeballs in melted chocolate and press onto each treat. Pipe on monster mouths, eyebrows, or horns with remaining chocolate.
  10. Let chocolate set at room temperature for about 15 minutes before serving.

Notes

Use gel food coloring instead of liquid for vibrant color without extra moisture. If mixture gets too stiff while pressing, microwave the pot for 10-15 seconds.
