  • 1 large or 2 medium delicata squash, washed and sliced into half-moons
  • 4 tablespoons (60g) unsalted butter
  • 2 tablespoons (30ml) pure maple syrup
  • 1 tablespoon (15ml) extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper, freshly cracked
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6–8 fresh sage leaves, torn
  • 1/2 teaspoon pumpkin pie spice (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease lightly.
  2. Wash the squash thoroughly. Cut off both ends, slice in half crosswise, and scoop out seeds. Slice each half into 1/2-inch thick half-moon shapes.
  3. Place squash slices in a large bowl. Drizzle with olive oil and sprinkle with salt, pepper, cinnamon, and nutmeg. Toss to coat evenly.
  4. Spread squash in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until edges are golden and centers are tender.
  5. While squash roasts, melt butter in a small saucepan over medium heat. Stir constantly with a whisk until foam subsides, brown specks appear, and the butter smells nutty (3-5 minutes). Remove from heat immediately.
  6. Whisk maple syrup into the brown butter. Pour over the roasted squash and toss gently to coat.
  7. Sprinkle torn sage leaves over the hot squash. The residual heat will wilt the sage.
  8. Serve immediately while hot.

Notes

Do not crowd the pan to ensure roasting instead of steaming. Watch the butter closely as it burns quickly. Fresh spices provide better flavor than pre-ground. The squash is done when a fork slides easily into the thickest part.
