  • 1/4 cup granulated sugar
  • 1 large egg

  • 3/4 cup yellow cake mix (dry, from a box)
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1/4 cup chopped pecans (optional)
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place your empty baking dish on a baking sheet to catch any overflow.
  2. In a medium mixing bowl, whisk together the pumpkin puree, evaporated milk, granulated sugar, egg, vanilla extract, pumpkin pie spice, and salt until smooth and well-combined.
  3. Pour the pumpkin mixture into your prepared baking dish and spread it evenly with a spatula. Tap the dish gently on the counter to release air bubbles.
  4. Sprinkle the dry cake mix evenly over the top of the pumpkin mixture. Do not stir.
  5. Scatter the cold butter cubes evenly over the cake mix. If using pecans, sprinkle them over the butter.
  6. Place the dish (on the baking sheet) in the preheated oven. Bake for 30-35 minutes, or until the top is golden brown and the edges are bubbly. The center should be set but still have a slight jiggle.
  7. Remove from the oven and let it cool for 5-10 minutes to allow the layers to set.
  8. Scoop into bowls while still warm and top each serving with a generous scoop of vanilla ice cream.

Notes

For best results, use cold butter straight from the fridge. Let the cake rest for 5-10 minutes before serving to allow layers to set. If using a glass or ceramic dish, baking time may be closer to 35 minutes; for metal, check at 28 minutes. The cake can be assembled up to 24 hours in advance and baked straight from the fridge, adding 5-7 minutes to the baking time.
