This creamy, spicy Buffalo chicken dip is the ultimate game day appetizer, made with shredded chicken, cream cheese, hot sauce, and two types of cheddar for a gooey, golden finish. It’s quick, easy, and always a crowd-pleaser.

  • 1/2 cup sour cream
  • 1/3 cup ranch dressing
  • 1 tablespoon ranch seasoning mix (optional)
  • 2 cups cooked, shredded chicken
  • 1/2 cup Buffalo hot sauce
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped fresh chives or green onions
  • 1 tablespoon crumbled bacon (optional)
  • Celery sticks, carrot sticks, tortilla chips, or crackers for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Let cream cheese sit on the counter to soften for about 20 minutes.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, ranch dressing, and ranch seasoning mix. Beat with an electric hand mixer on medium speed until smooth and fluffy, about 2 minutes.
  3. Add shredded chicken and Buffalo hot sauce. Stir with a rubber spatula until evenly coated.
  4. Fold in 3/4 cup sharp cheddar and 3/4 cup Monterey Jack cheese. Reserve remaining cheese for topping.
  5. Transfer mixture to a greased 9×9-inch baking dish or 8-inch cast iron skillet. Spread evenly. Sprinkle remaining cheddar and Monterey Jack on top, then add crumbled blue cheese if using.
  6. Bake for 20-25 minutes, until edges are bubbly and top is golden brown. For a browner top, broil for 1-2 minutes at the end.
  7. Remove from oven and let rest for 5 minutes. Garnish with chopped chives or green onions and crumbled bacon.
  8. Serve warm with celery sticks, carrot sticks, tortilla chips, or crackers.

Notes

Don’t skip softening the cream cheese for a smooth texture. Use full-fat dairy for best results. Shred your own cheese for optimal melting. To make ahead, assemble without baking, cover, and refrigerate for up to 24 hours; add 10 minutes to baking time. Leftovers keep in the refrigerator for up to 4 days. Not recommended for freezing.
