Ingredients

Scale
  • 4 pounds beef brisket (preferably flat cut)
  • 2 tablespoons finely ground coffee
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1/2 cup beef broth or water
  • Optional garnish: fresh chopped parsley or green onions

Instructions

  1. Prepare the Coffee Rub: In a medium bowl, mix the ground coffee, smoked paprika, brown sugar, black pepper, garlic powder, onion powder, cayenne pepper (if using), and salt. Stir well to combine all spices evenly.
  2. Trim the Brisket: Using a sharp knife, trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor and moisture. Pat the meat dry with paper towels to help the rub stick better.
  3. Apply the Rub: Rub the coffee spice mix generously over the entire brisket, pressing it in to form a crust. Wrap the brisket in plastic wrap and let it rest in the fridge for at least 1 hour or overnight for deeper flavor penetration.
  4. Set Up the Slow Cooker: Pour beef broth or water in the bottom of the slow cooker to keep things moist. Place the rubbed brisket fat-side up in the cooker. Cover and cook on low for 8-10 hours, or on high for 5-6 hours.
  5. Check for Doneness: The brisket is ready when it’s fork-tender and easily pulls apart. Aim for an internal temperature of about 195Β°F-205Β°F for the best texture.
  6. Finish with BBQ Sauce: Carefully transfer the brisket to a baking tray or roasting pan. Brush with BBQ sauce all over. Optionally, broil for 3-5 minutes to caramelize the sauce, watching closely to avoid burning.
  7. Rest and Slice: Let the brisket rest for 10 minutes before slicing against the grain into thin slices to retain juices.
  8. Pro Tip: If the brisket seems dry, spoon some slow cooker juices over the sliced meat before serving.

Notes

Resting the brisket after cooking is crucial to retain juices and tenderness. Use fresh ground coffee and spices for best flavor. Cooking on low heat yields the most tender meat. If you don’t have smoked paprika, regular paprika can be used but lacks smoky flavor. For gluten-free, verify BBQ sauce ingredients. Optional broiling caramelizes BBQ sauce but watch carefully to avoid burning.
