  • 1/4 cup honey (85 grams)
  • 1/3 cup soy sauce (80 ml), preferably low-sodium
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar (30 ml)
  • 1/4 cup water (60 ml)
  • 1 teaspoon sesame oil (5 ml), optional
  • 1/2 teaspoon red pepper flakes
  • 2 stalks green onions, sliced (for garnish)
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (for thickening sauce, optional)

Instructions

  1. Trim any excess fat or silver skin from the pork tenderloin. Pat dry with paper towels to ensure a good sear. (About 5 minutes)
  2. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the pork tenderloin and sear on all sides until golden brown, about 2-3 minutes per side. Remove and set aside. (10 minutes)
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. In a mixing bowl, whisk together honey, soy sauce, rice vinegar, water, sesame oil, and red pepper flakes. Pour the sautéed garlic into the sauce mixture and stir to combine.
  5. Place the browned pork tenderloin in the crockpot. Pour the honey garlic sauce over the pork, ensuring it is well-coated. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the internal temperature reaches 145°F (63°C) and the meat is tender enough to shred with a fork.
  6. About 15 minutes before serving, remove the pork and place on a serving plate. Mix cornstarch with cold water and stir into the crockpot sauce. Turn the slow cooker to high and cook uncovered until the sauce thickens, stirring occasionally.
  7. Slice the pork tenderloin and drizzle with the thickened sauce. Garnish with sliced green onions and serve warm.

Notes

Searing the pork before slow cooking locks in juices and adds flavor. Avoid burning garlic to prevent bitterness. Adjust soy sauce saltiness to taste. Check pork at 4 hours if using low heat to avoid overcooking. Rest pork 5-10 minutes before slicing to redistribute juices. Cornstarch slurry thickens sauce if needed.
