Tender pulled chicken cooked in a sweet and garlicky honey sauce, slow-cooked to perfection and served on toasted buns for a delicious and easy meal.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup (85g) honey
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) soy sauce (low sodium preferred)
  • 2 tablespoons (30ml) apple cider vinegar
  • 2 tablespoons (33g) tomato paste
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 6 sandwich buns (brioche or potato buns recommended)
  • 2 tablespoons butter (for toasting buns, optional)

Instructions

  1. In a mixing bowl, combine honey, minced garlic, soy sauce, apple cider vinegar, tomato paste, onion powder, smoked paprika, black pepper, and salt. Whisk until smooth.
  2. Place chicken breasts in the bottom of the slow cooker. Pour the sauce evenly over the chicken, coating each piece.
  3. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken is tender and shreds easily.
  4. Remove chicken from slow cooker and shred with two forks. Return shredded chicken to the slow cooker and stir into the sauce. If sauce is too thin, cook uncovered on high for 15-20 minutes to thicken.
  5. Melt butter in a skillet over medium heat. Split sandwich buns and toast buttered side down until golden and crispy, about 2-3 minutes per batch.
  6. Assemble sandwiches by piling honey garlic pulled chicken on toasted buns. Add optional toppings like coleslaw or pickles if desired.
  7. Serve warm and enjoy.

Notes

For extra flavor, sear chicken briefly before slow cooking. Use fresh garlic for best taste. Toast buns with butter to prevent sogginess. Sauce can be thickened by cooking uncovered on high for 15-20 minutes. Leftovers keep well refrigerated for 3 days and freeze for up to 2 months. Greek yogurt can be stirred in after cooking for a creamy twist. Chicken thighs can be used as a juicier alternative with adjusted cooking time.
