Savory Coffee-Rubbed Ribeye Steak Recipe with Garlic Herb Butter

  • 1 thick-cut ribeye steak (about 12 ounces / 340 grams), preferably well-marbled
  • 2 tablespoons finely ground dark roast coffee (freshly ground beans recommended)
  • 1 tablespoon paprika
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter (softened)
  • 2 cloves fresh garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 1 tablespoon olive oil

Instructions

  1. Remove ribeye from the fridge about 30 minutes before cooking to reach room temperature. Pat dry with paper towels.
  2. In a small bowl, mix ground coffee, paprika, brown sugar, garlic powder, onion powder, kosher salt, and black pepper to make the coffee rub.
  3. Rub the coffee mixture all over both sides of the ribeye, pressing gently to adhere.
  4. In a separate bowl, combine softened butter, minced garlic, chopped parsley, and thyme. Mix until evenly blended and set aside.
  5. Heat a cast iron skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  6. Place the ribeye in the hot pan and sear without moving for 4-5 minutes for medium-rare.
  7. Flip the steak and cook the other side for another 4 minutes.
  8. Check doneness with an instant-read thermometer; aim for 130°F (54°C) for medium-rare.
  9. Transfer steak to a plate, spoon a generous dollop of garlic herb butter on top, tent loosely with foil, and let rest for 5-7 minutes before serving.

Notes

Use freshly ground coffee beans for best flavor. Let the steak rest after cooking to lock in juices. Adjust cooking time based on steak thickness and desired doneness. For dairy-free, substitute butter with vegan butter or ghee. Avoid flipping the steak multiple times to maintain a good crust.
