A pair of easy, light, and refreshing summer mocktails perfect for sharing with someone special. Featuring a zesty mint lime drink and a smooth watermelon basil refresher, these recipes come together quickly with simple ingredients.

  • For the Zesty Mint Lime Mocktail:
  • 2 large fresh limes, juiced and sliced
  • About 12 fresh mint leaves, plus extra for garnish
  • 1/4 cup simple syrup (homemade or store-bought)
  • 1 cup (240 ml) sparkling water, chilled
  • Ice cubes as needed
  • Optional: pinch of sea salt
  • For the Watermelon Basil Refresher:
  • 1 cup (150 grams) seedless watermelon chunks, roughly chopped
  • 68 fresh basil leaves, plus extra for garnish
  • Juice of 1 medium lemon
  • 1 tablespoon honey or agave syrup (adjust to taste)
  • 1 cup (240 ml) sparkling water, chilled
  • Ice cubes as needed

Instructions

  1. Prepare the Zesty Mint Lime Mocktail:
  2. In one glass, place the fresh mint leaves and two lime slices. Using a muddler or wooden spoon, gently press the leaves and lime to release oils and juice without shredding the mint.
  3. Add simple syrup and a pinch of sea salt if using. Stir gently to combine.
  4. Fill the glass halfway with ice cubes.
  5. Pour in the sparkling water (about 1 cup / 240 ml), stirring lightly to mix.
  6. Top with an extra lime slice and a mint sprig for garnish. Set aside.
  7. Prepare the Watermelon Basil Refresher:
  8. Place watermelon chunks and basil leaves in a blender. Pulse until smooth but slightly thick, not watery.
  9. Optionally, strain the puree through a fine mesh sieve to remove pulp for a smoother drink.
  10. Stir in fresh lemon juice and honey or agave syrup until well combined.
  11. Fill a second glass halfway with ice cubes.
  12. Pour the watermelon mixture into the glass until about two-thirds full.
  13. Top off with sparkling water (about 1 cup / 240 ml), stirring gently.
  14. Garnish with a basil leaf or two and a small watermelon wedge.
  15. Serve both mocktails immediately to enjoy their full freshness and fizz.

Notes

Use chilled sparkling water to keep bubbles fresh. Muddle herbs gently to avoid bitterness. Prepare components just before serving for best fizz. Can prepare muddled base and puree up to 24 hours ahead and refrigerate separately. Substitute herbs or sweeteners as desired for variations.
