These colorful and fun rainbow fruit and cheese kabobs are the perfect quick and easy snack for school events, birthday parties, or a healthy after-school treat. Made with simple ingredients, they come together in under 15 minutes and are a certified crowd-pleaser.

Ingredients

Scale
  • Strawberries, hulled and halved (or whole if small)
  • Mandarin orange segments, drained (or fresh clementine wedges)
  • Fresh pineapple chunks (canned works in a pinch, just pat them dry)
  • Green grapes or honeydew melon balls
  • Fresh blueberries
  • Red grapes or blackberries
  • 8 oz block of mild cheddar cheese, cut into ¾-inch cubes (or Colby Jack, mozzarella pearls)
  • 6-inch wooden skewers or lollipop sticks (short, blunt-ended for safety)

Instructions

  1. Wash all fruit thoroughly under cool water and pat completely dry with paper towels. Hull strawberries and cut in half. Cut pineapple into ¾-inch chunks. Drain mandarin oranges if using canned. Set out in separate bowls by color.
  2. Cut the block of cheddar into ¾-inch cubes while still cold from the fridge for cleaner cuts. If using mozzarella pearls, leave whole.
  3. Lay out skewers on a clean, dry surface. Arrange bowls of fruit and cheese in rainbow order: Red, Orange, Yellow, Green, Blue, Purple, then cheese cubes.
  4. Take one skewer. Thread a strawberry (red) onto the skewer, pushing gently to about 1 inch from the bottom. Follow with a mandarin orange segment (orange), pineapple chunk (yellow), green grape (green), blueberry (blue), and red grape (purple). Finish with a cube of cheddar cheese as an anchor.
  5. Repeat until all fruit and cheese are used. This makes about 12 to 15 kabobs.
  6. Before serving, check each kabob for sharp points. For kindergarteners, use flat, blunt-ended lollipop sticks instead of sharp skewers.
  7. Serve immediately or arrange in a single layer on a baking sheet, cover with plastic wrap, and refrigerate for up to 2 hours. Pat dry again before serving if refrigerated.

Notes

Wet fruit is the enemy of a good kabob. Pat fruit dry thoroughly after washing. Cut fruit and cheese into uniform ¾-inch pieces for best results. Always put cheese on the end of the skewer as an anchor. For toddlers, serve fruit and cheese pieces in a cup without the stick to avoid choking hazards. For dairy-free, substitute cheese with firm baked tofu cubes. For low-sugar, use more cheese and low-sugar fruits like berries and green grapes.
