  • 1 pound (450g) ground beef (80/20 lean-to-fat ratio preferred)
  • 1 cup (200g) long-grain white rice
  • 1 ½ cups (360ml) beef broth (low-sodium)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika (smoked or regular)
  • Salt and black pepper to taste
  • 1 ½ cups (200g) frozen mixed vegetables (peas, carrots, corn, green beans)
  • ½ cup (50g) shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break into small crumbles. Cook until no pink remains, leaving about a tablespoon of grease for flavor.
  2. Push beef to the side or remove to a plate. Add diced onion to the pan and cook for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir tomato paste into the beef and onion mixture. Sprinkle in paprika, salt, and pepper. Cook for 1 minute, stirring constantly, to bloom the spices.
  4. Pour in beef broth and Worcestershire sauce, scraping up browned bits from the bottom of the pan. Stir in uncooked rice, ensuring it is submerged in liquid.
  5. Bring mixture to a boil, then reduce heat to low. Cover tightly with a lid and simmer undisturbed for 15 minutes.
  6. Remove lid and stir in frozen mixed vegetables. Cover and cook for another 5 minutes until vegetables are heated through and rice is tender.
  7. Sprinkle shredded cheddar cheese over the top. Cover and cook for 2 minutes until cheese is melted and bubbly.
  8. Remove from heat and let rest for 5 minutes to allow rice to absorb remaining liquid. Fluff with a fork, garnish with parsley, and serve.

Notes

Do not rinse the rice to retain starch for a creamier sauce. Keep heat low during simmering to prevent burning. If rice is still hard after 15 minutes, add ¼ cup hot water and cook 5 more minutes. For a crunchy top, broil for 1 minute after adding cheese. This recipe is naturally gluten-free if using certified GF broth and Worcestershire sauce.
