A quick and easy picnic menu featuring juicy grilled chicken skewers, a refreshing cucumber-mint salad, and a sweet berry dessert, perfect for an intimate rooftop celebration.

  • 2 boneless, skinless chicken breasts (about 12 oz / 340 g), cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Wooden skewers, soaked in water for 30 minutes
  • 1 large cucumber, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon white wine vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/4 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • 1 teaspoon honey or maple syrup (optional)
  • Fresh mint sprigs for garnish
  • Crusty baguette or rustic bread (optional)
  • Cold sparkling water or your favorite summer cocktail

Instructions

  1. In a medium bowl, combine olive oil, lemon juice and zest, minced garlic, oregano, salt, and pepper. Add the chicken cubes and toss well to coat evenly. Cover and refrigerate for at least 30 minutes (up to 2 hours).
  2. While the chicken marinates, thinly slice the cucumber and chop the mint. In a separate bowl, whisk together white wine vinegar, olive oil, salt, and pepper. Toss the cucumber and mint with the dressing. Chill until ready to serve.
  3. Remove chicken from marinade and thread onto soaked wooden skewers, spacing pieces evenly.
  4. Heat grill or grill pan over medium-high heat. Grill skewers for 5-6 minutes per side until internal temperature reaches 165Β°F (75Β°C) and juices run clear.
  5. Rinse strawberries and blueberries. Slice strawberries thinly. In small bowls or jars, layer berries with Greek yogurt. Drizzle honey or maple syrup if desired and garnish with fresh mint. Chill until serving.
  6. Slice baguette if using. Pack all items into picnic containers or plates along with napkins, utensils, and drinks. Carry to rooftop or balcony and set up with blanket or cushions.

Notes

Marinate chicken for at least 30 minutes or up to 2 hours for best flavor. Soak wooden skewers in water to prevent burning. Use medium-high heat for grilling to get nice char marks without drying out the chicken. Salad dressing tastes better if allowed to sit for a few minutes before tossing. Serve chicken warm, salad chilled, and dessert cold. Store leftovers separately and consume berries and yogurt dessert the same day.
