Perfect Honey Glazed Ham with Brown Sugar Pineapple

A sweet and sticky honey glazed ham with brown sugar and pineapple, perfect for holidays or any special occasion. This recipe creates a gorgeous caramelized crust while keeping the meat juicy and tender.

  • 1 fully cooked bone-in ham (810 pounds)
  • 3040 whole cloves
  • 1 cup packed brown sugar
  • 1/2 cup honey
  • 1/2 cup pineapple juice
  • 1/4 cup unsalted butter
  • 2 tablespoons Dijon mustard
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 can (20 ounces) pineapple rings in juice, drained
  • 1012 maraschino cherries

Instructions

  1. About 30 minutes before cooking, take the ham out of the fridge to come to room temperature. Remove packaging, rinse briefly under cold water, and pat dry with paper towels.
  2. Score the surface of the ham in a diamond pattern, cutting about 1/4 inch deep and 1 inch apart.
  3. Stud each diamond with a whole clove (optional, but recommended).
  4. Preheat oven to 325°F (163°C). Place ham cut-side down on a rack in a roasting pan. Add 1/2 cup water to the bottom of the pan.
  5. Cover ham loosely with aluminum foil and bake for about 15 minutes per pound (about 2 hours for an 8-pound ham).
  6. About 20 minutes before the first bake is done, make the glaze: In a small saucepan over medium heat, combine brown sugar, honey, pineapple juice, butter, Dijon mustard, cinnamon, ground cloves, and nutmeg. Whisk until butter melts and sugar dissolves. Simmer for 2-3 minutes until slightly thickened. Remove from heat.
  7. Remove ham from oven and increase oven temperature to 400°F (204°C). Remove foil. Brush about half the glaze over the ham. If using, secure pineapple rings with toothpicks and place a cherry in the center of each ring.
  8. Return ham to oven, uncovered, and bake for 30-40 minutes, basting with remaining glaze every 10 minutes.
  9. Ham is done when internal temperature reaches 140°F (60°C) in the thickest part, avoiding the bone.
  10. Let ham rest for at least 15 minutes before carving.

Notes

Score the ham deeply (1/4 inch) to allow the glaze to penetrate. Baste every 10 minutes during the final bake for the best crust. Let the ham rest before carving to keep it juicy. Pan drippings can be strained and used as a sauce.
