  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 3–4 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted
  • 1 large lemon (zest and juice)
  • 1 tablespoon Dijon mustard
  • 1/4 cup panko breadcrumbs
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and drizzle with olive oil.
  2. Pat salmon fillets dry with paper towels. Season flesh side with salt and pepper.
  3. In a small bowl, combine dill, parsley, chives, garlic, lemon zest, panko, 2 tablespoons melted butter, Dijon mustard, salt, and pepper. Stir into a cohesive paste.
  4. Place salmon skin-side down on prepared baking sheet. Spoon herb mixture evenly over each fillet, pressing gently to adhere.
  5. Bake for 12-15 minutes, until salmon flakes easily and internal temperature reaches 125°F (52°C) for medium or 135°F (57°C) for medium-well.
  6. While salmon bakes, melt remaining 2 tablespoons butter. Stir in lemon juice and a pinch of salt.
  7. Remove salmon from oven. Drizzle warm lemon butter over fillets. Let rest 2-3 minutes before serving.
