An easy 5-step recipe for juicy, flavorful grilled corn on the cob with a smoky char and rich butter finish, perfect for any outdoor meal or barbecue.

Ingredients

Scale
  • 46 ears fresh corn on the cob with husks
  • 4 tablespoons unsalted butter, softened
  • Kosher salt, to taste
  • Freshly ground black pepper, a pinch
  • Optional: fresh lime juice or smoked paprika for extra flavor

Instructions

  1. Peel back the husks without removing them entirely and remove the silk threads. Fold the husks back over the corn. (Soaking the corn for 15-20 minutes is optional but helps prevent burning.)
  2. Preheat the grill to medium-high heat, about 375Β°F (190Β°C).
  3. Melt the butter in a small bowl and mix in salt, pepper, and any optional seasonings like lime juice or smoked paprika. Keep warm for basting.
  4. Place the corn on the grill and cook for 15-20 minutes, turning every 5 minutes to ensure even cooking and char. The husks will blacken but the corn inside will steam and cook perfectly.
  5. Carefully peel back the husks (watch for steam) and brush the corn generously with the melted butter mixture. Serve immediately while warm and juicy.

Notes

Soaking the corn husks before grilling helps prevent burning and adds moisture but is optional. Turn the corn regularly to avoid burning and ensure even cooking. Brush butter after grilling to avoid flare-ups. Let the corn rest briefly after grilling for better butter absorption. For dairy-free versions, substitute butter with olive oil or vegan margarine.
