Instructions

  1. Prep the peaches: Peel peaches by blanching in boiling water for 30 seconds, then plunge into ice water to loosen skins if needed. Slice into Β½-inch thick wedges.
  2. Toss sliced peaches in a large bowl with Β½ cup granulated sugar, 1 tbsp lemon juice, 1 tsp ground cinnamon, and 2 tbsp all-purpose flour. Coat evenly and set aside for 10 minutes.
  3. Make the oat pecan streusel: In a separate bowl, combine 1 cup rolled oats, Β½ cup chopped pecans, Β½ cup all-purpose flour, β…“ cup packed brown sugar, β…› tsp nutmeg (if using), and a pinch of sea salt.
  4. Pour in 6 tbsp melted unsalted butter and stir until mixture clumps together but remains crumbly.
  5. Preheat oven to 350Β°F (175Β°C). Pour peach mixture into a 9×9-inch baking dish, spreading evenly.
  6. Sprinkle oat pecan streusel evenly over the peaches, covering all the fruit.
  7. Bake on center oven rack for 40-45 minutes until peach juices bubble and streusel is golden brown. Tent with foil if topping browns too quickly.
  8. Let crisp cool for about 15 minutes before serving.
  9. Serve warm with generous scoops of salted vanilla ice cream on top.
