  • 1 red onion, sliced into thick rings
  • 8 oz cremini mushrooms, cleaned
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon
  • Fresh rosemary sprigs for garnish
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • 1/4 cup Greek yogurt
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh mint
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 3 ears fresh corn, grilled and kernels removed
  • 2 ripe avocados, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup Israeli couscous
  • 1 1/4 cups low-sodium chicken broth or vegetable broth
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • Zest of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 large cucumber, thinly sliced
  • 1/2 cup fresh mint leaves
  • 1 lemon, thinly sliced
  • 8 cups cold water
  • Ice cubes

Instructions

  1. Prepare the Herb-Marinated Chicken Skewers: In a medium bowl, combine Greek yogurt, lemon juice, parsley, mint, garlic, smoked paprika, salt, and pepper. Add chicken pieces and toss until fully coated. Cover and refrigerate for at least 20 minutes (up to 2 hours for deeper flavor).
  2. Prep the Grilled Vegetables: Slice zucchini, bell peppers, and onion as noted. Toss mushrooms and vegetables with olive oil, minced garlic, salt, and pepper in a large bowl. Set aside.
  3. Grill the Chicken and Vegetables: Heat your grill or grill pan to medium-high. Thread chicken onto skewers. Grill chicken skewers for about 5-7 minutes per side until cooked through and slightly charred. Simultaneously, grill vegetables, turning occasionally, until tender and grill marks appear (about 10 minutes). Remove and squeeze lemon juice over vegetables while warm.
  4. Make the Summer Corn & Avocado Salad: Grill corn ears alongside veggies. Once cooled slightly, cut kernels off the cob and place in a large bowl. Add diced avocado, cherry tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper. Toss gently to combine.
  5. Prepare the Lemon & Herb Couscous: In a small saucepan, bring chicken broth to a boil. Add couscous, reduce heat to low, cover, and simmer for 10 minutes or until liquid is absorbed. Fluff with a fork and stir in dill, parsley, lemon zest, olive oil, salt, and pepper.
  6. Assemble the Refreshing Cucumber Mint Water: In a large pitcher, combine cold water with cucumber slices, mint leaves, and lemon slices. Refrigerate until ready to serve. Add ice cubes before pouring.

Notes

Marinate chicken for at least 20 minutes for best flavor. Oil grill grates before cooking to prevent sticking. Avoid overcrowding the grill to maintain crispness. Toss avocado gently with lime juice just before serving to prevent browning. Couscous can be made ahead and served at room temperature. For gluten-free, substitute couscous with quinoa or cauliflower rice. Vegetarian option: swap chicken for grilled halloumi or marinated tofu skewers.
