  • ½ cup neutral oil (vegetable or canola)
  • 1 cup granulated sugar
  • 2 large eggs, room temperature

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup chopped walnuts
  • 1 teaspoon orange zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. Peel the ripe persimmons and mash them in a large bowl until smooth. Ensure you have about 1 ½ cups of puree.
  3. Add the vegetable oil, sugar, eggs, and vanilla extract to the mashed persimmons. Whisk until well combined and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  5. Pour the dry ingredients into the wet mixture. Gently fold together with a spatula until just combined; do not overmix.
  6. Fold in the chopped walnuts, reserving a small handful for topping.
  7. Pour batter into the prepared loaf pan, smooth the top, and sprinkle with reserved walnuts.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too quickly.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure persimmons are fully ripe and soft for best moisture and sweetness. Do not overmix the batter to avoid a tough texture. Room temperature eggs help emulsify the batter better. Toasting walnuts beforehand enhances their flavor. The bread keeps well for 3 days on the counter or up to a week in the fridge.
