A quick and easy Mediterranean grilled salmon recipe featuring a zesty lemon garlic marinade that delivers fresh, bold flavors and a tender, flaky texture.

  • 4 salmon fillets, skin-on, about 6 ounces (170g) each
  • 3 tablespoons extra virgin olive oil
  • Fresh lemon juice from 2 medium lemons (about 1/4 cup or 60 ml)
  • 3 cloves garlic, finely minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh chopped oregano)
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • Salt to taste (preferably kosher salt)
  • Black pepper to taste
  • A pinch of red pepper flakes (optional)

Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, chopped parsley, salt, black pepper, and red pepper flakes if using.
  2. Marinate the salmon: Place salmon fillets in a shallow dish and pour marinade over them, turning gently to coat all sides. Cover with plastic wrap and refrigerate for 15-20 minutes, no longer than 30 minutes.
  3. Preheat the grill: Heat grill to medium-high (about 400°F/200°C). Lightly oil the grill grates with a brush or oil-soaked paper towel to prevent sticking.
  4. Grill the salmon: Place salmon skin-side down on the grill. Cook undisturbed for 6-7 minutes until skin crisps and fish releases easily. Flip carefully and grill the other side for 2-3 minutes until opaque and flaky.
  5. Rest and serve: Transfer salmon to a plate, tent loosely with foil, and let rest for 5 minutes. Serve with lemon wedges and fresh parsley.

Notes

Do not marinate salmon for longer than 30 minutes to avoid ‘cooking’ the fish with lemon juice. Keep the skin on for moisture and easier flipping. Preheat and oil grill grates well to prevent sticking. Use gentle flipping motions. Check doneness by opaque flesh that flakes easily. If no grill is available, bake at 400°F for 12-15 minutes or pan-sear 4-5 minutes per side.
