  • 1 cup strong brewed coffee (hot or iced)
  • ¼ cup cold milk (whole milk for best foam, or oat milk for dairy-free)
  • 1 tablespoon pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 tablespoon maple syrup (or honey, or brown sugar)
  • ½ teaspoon pumpkin pie spice (store-bought or homemade blend)
  • ¼ teaspoon vanilla extract (pure vanilla)
  • Pinch of salt

Instructions

  1. Brew your coffee. Make one cup of strong coffee using your preferred method. If making iced coffee, let the coffee cool or brew it the night before and refrigerate.
  2. Make the cold foam base. In a small bowl or jar, combine ¼ cup cold milk, 1 tablespoon pumpkin puree, 1 tablespoon maple syrup, ½ teaspoon pumpkin pie spice, ¼ teaspoon vanilla extract, and a pinch of salt. Stir gently to break up the pumpkin puree.
  3. Froth the mixture. Using a handheld frother, froth for 30-45 seconds until thick, creamy, and doubled in volume (texture like wet whipped cream). Alternatively, use a French press and pump for 30 seconds.
  4. Prepare your coffee. Pour brewed coffee into your mug. For iced coffee, fill mug with ice first, then pour coffee over it. Leave about an inch of space at the top.
  5. Add the cold foam. Gently spoon or pour the cold foam over the back of a spoon onto the coffee to help it float. Do not stir.
  6. Finish with a garnish. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top.
  7. Serve immediately. Cold foam deflates after a few minutes, so drink right away for best texture.

Notes

Don’t overdo the pumpkin puree—1 tablespoon is the sweet spot. Use really cold milk for best foam. The salt is not optional; it brightens the flavors. If your foam isn’t getting thick, your milk might not be cold enough. The base mixture can be made ahead and stored in the fridge for up to 3 days.
