Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup of rolled oats, 1/4 cup of ground flaxseed, and a pinch of salt. Stir together.
  2. Add the wet ingredients: Scoop in 1/2 cup of peanut butter, 1/3 cup of honey, and 1 teaspoon of vanilla extract.
  3. Mix until combined: Stir everything together until no dry oats remain and the mixture looks uniform, like a thick, slightly sticky cookie dough. Adjust with more honey if too dry or more oats if too wet.
  4. Fold in the chocolate chips: Pour in 1/2 cup of mini chocolate chips and fold until evenly distributed.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 15-20 minutes to make rolling easier.
  6. Roll into bites: Lightly wet your hands, scoop about 1 tablespoon of dough, and roll into balls. Place on a parchment-lined baking sheet. Makes about 16-18 bites.
  7. Firm up in the fridge: Refrigerate the bites for at least 30 minutes to help them hold their shape and meld flavors.

Notes

Use room temperature peanut butter for easier mixing. Wet hands slightly to prevent sticking when rolling. Chilling the dough for 15-20 minutes makes rolling easier. For a vegan option, substitute honey with maple syrup. For nut-free, use sunflower seed butter. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
