Ingredients

  • White or whole wheat sandwich bread, crusts removed
  • Shredded cheddar cheese
  • Finely grated carrots
  • Finely chopped fresh spinach (baby spinach preferred)

  • Optional: finely diced green onions
  • Salt and freshly ground black pepper, to taste
  • Butter, softened (unsalted recommended)
  • Nonstick cooking spray or a light drizzle of olive oil

Instructions

  1. Prep the Veggies (10 minutes): Finely grate the carrots and cheese. Chop the spinach, bell pepper, and green onions into tiny pieces or pulse in a food processor until finely minced.
  2. Mix the Filling (5 minutes): Combine shredded cheese with prepared veggies in a bowl. Season lightly with salt and pepper. If mixture is soggy, squeeze out excess moisture from spinach.
  3. Prepare the Bread (5 minutes): Remove crusts from sandwich slices. Flatten each slice gently with a rolling pin or kitchen towel to about 1/4 inch thickness.
  4. Assemble the Pinwheels (5 minutes): Spread a thin, even layer of veggie-cheese mixture over each bread slice, leaving 1/2 inch clear at the edge. Roll tightly and press to seal. Use toothpicks if needed.
  5. Slice and Grill (10 minutes): Cut each roll into 1-inch pinwheel slices. Heat a nonstick skillet over medium heat, add butter or cooking oil. Grill pinwheels 2-3 minutes per side until golden and cheese melts. Flip carefully.
  6. Serve Warm: Remove toothpicks if used and serve immediately.
