Instructions

  1. In your saucepan, add 6 oz (170 g) tomato paste, 1/4 cup (60 ml) apple cider vinegar, and 1/2 cup (120 ml) water. Whisk together until smooth (about 2 minutes).
  2. Stir in 2 tablespoons monk fruit sweetener, 1 tablespoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon mustard powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Optional: Add 1 teaspoon liquid smoke for deeper smokiness (1-2 minutes).
  3. Place the pan over medium-low heat and bring the mixture to a gentle simmer. Stir frequently to prevent sticking or burning. Let it simmer for 15-18 minutes until the sauce thickens slightly and the flavors meld.
  4. Taste and adjust: add more vinegar for tanginess, more monk fruit sweetener for sweetness, or a little water if too thick (about 2 minutes).
  5. Remove from heat and let the sauce cool for 10 minutes. Transfer to a clean jar or bowl and refrigerate. Flavors develop more after a few hours or overnight.

Notes

If sauce starts to stick, lower heat and stir frequently. Use good-quality apple cider vinegar for better flavor. Sauce thickens in fridge; stir in water to loosen before serving.
