Instructions

  1. Slice the brisket about ยผ-inch thick against the grain. Lay the slices in a loose pile on one corner of the board. Sprinkle with flaky sea salt and fresh cracked pepper.
  2. Slice the smoked sausage on a bias into ยฝ-inch rounds. Fan them out in a row or cluster them near the brisket.
  3. Slice the smoked turkey into thin strips or leave the slices whole. Fold them into loose ribbons and place them opposite the brisket for visual balance.
  4. Warm the pulled pork slightly in the microwave (about 30 seconds) or leave it at room temperature. Pile it in a small bowl or directly on the board with a small fork for serving.
  5. Slice the cheddar into thin triangles. Cut the smoked gouda into small wedges. Arrange them in separate clusters around the board. Leave the blue cheese crumbles in a small bowl to prevent them from rolling everywhere.
  6. Fill small ramekins with whole grain mustard, honey, cornichons, pickled jalapeรฑos, and olives. Space them evenly across the board so guests don’t have to reach too far.
  7. Arrange the crackers and baguette slices in gaps between the meat and cheese. Fan them out in small groups rather than piling them.
