A quick and easy summer snack featuring juicy watermelon cubes, creamy feta, and fresh mint leaves threaded onto skewers with a lime and olive oil drizzle for a refreshing burst of flavor.

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cut into ½-inch cubes
  • Fresh mint leaves, whole, washed and patted dry
  • 1 tablespoon fresh lime juice
  • 1 teaspoon extra virgin olive oil
  • Pinch of freshly ground black pepper
  • Wooden or bamboo skewers, soaked in water for 30 minutes

Instructions

  1. Rinse the watermelon thoroughly and cut into 1-inch cubes, discarding the rind.
  2. Cut or crumble the feta into ½-inch cubes or crumble gently by hand.
  3. Rinse mint leaves under cold water and pat dry.
  4. In a mixing bowl, combine watermelon cubes, lime juice, olive oil, and black pepper; toss gently to coat evenly.
  5. Thread onto each skewer starting with a watermelon cube, then a folded mint leaf, followed by a feta cube; repeat if skewer length allows, ending with a mint leaf on top.
  6. Place assembled skewers on a serving platter and refrigerate for 15-20 minutes before serving chilled or at room temperature.

Notes

Soak wooden skewers in water for 30 minutes before use to prevent burning if grilling. Pat watermelon cubes dry if too juicy to avoid soggy skewers. Add mint leaves last and keep skewers chilled until serving. For a smoky flavor, briefly grill watermelon cubes and cool before assembling. Substitute feta with firm tofu or dairy-free cheese for a dairy-free version.
