  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon gelatin powder (or agar-agar for vegan adaptation)
  • 2 tablespoons cold water
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Sprinkle 1 teaspoon of gelatin powder over 2 tablespoons of cold water in a small bowl. Let it sit for about 5 minutes to bloom.
  2. Gently warm the bloomed gelatin over a double boiler or in short bursts in the microwave (about 10 seconds). Stir until fully dissolved and set aside to cool slightly without hardening.
  3. In a large mixing bowl, whip 1 cup of heavy cream or coconut cream with an electric mixer on medium-high speed until soft peaks form (about 3-4 minutes).
  4. In another bowl, combine Β½ cup Greek yogurt, 2 tablespoons low-glycemic sweetener, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice. Stir until smooth and sweetener is mostly dissolved.
  5. Slowly pour the slightly cooled gelatin into the yogurt mixture, stirring quickly to blend smoothly without clumping.
  6. Gently fold the whipped cream into the yogurt and gelatin mixture using a spatula, folding about 10-12 times until combined and airy.
  7. Toss the sliced strawberries with a pinch of sweetener and a splash of lemon juice. Let sit for 5 minutes to macerate.
  8. Spoon a layer of the strawberry mixture into serving glasses, then add a generous layer of the mousse on top. Repeat if glasses are tall enough, finishing with mousse.
  9. Refrigerate the assembled dessert for at least 2 hours to allow mousse to set properly.
  10. Before serving, garnish with fresh mint leaves or whole strawberries.

Notes

Use agar-agar powder as a vegan substitute for gelatin, following package instructions. Whip cream to soft peaks to avoid grainy texture. Macerate strawberries to enhance flavor. Chill mousse at least 2 hours for best set. Avoid freezing to maintain texture.
