A quick and easy 5-minute refreshment combining fresh strawberries and lemons for a perfectly balanced, sweet and tangy summer drink.

Ingredients

Scale
  • 1 pound (450g) fresh strawberries, hulled and chopped
  • 4 to 5 large fresh lemons (about 1 cup or 240ml lemon juice), freshly squeezed
  • 3/4 cup (150g) granulated sugar (adjust to taste; can substitute honey or maple syrup)
  • 4 cups (960ml) cold water, divided
  • Ice cubes, as needed for serving
  • Optional: handful of fresh mint leaves for garnish
  • Optional: splash of sparkling water for fizz

Instructions

  1. Rinse, hull, and roughly chop 1 pound of fresh strawberries (about 5 minutes).
  2. Place chopped strawberries in a blender or food processor with 1 cup (240ml) cold water and pulse until smooth (1-2 minutes). For pulp-free lemonade, strain the puree through a fine mesh sieve.
  3. Roll lemons on the counter, cut in half, and juice to yield about 1 cup (240ml) fresh lemon juice, removing seeds (about 5 minutes).
  4. Make simple syrup by combining 3/4 cup (150g) sugar with 1 cup (240ml) water in a small saucepan. Heat over medium, stirring until sugar dissolves. Remove from heat and cool.
  5. In a large pitcher, combine strawberry puree, lemon juice, and cooled simple syrup. Add remaining 3 cups (720ml) cold water and stir well. Adjust sweetness or tartness as desired.
  6. Add ice cubes to pitcher or glasses. Garnish with fresh mint or lemon slices if desired. Serve immediately or refrigerate up to 2 days.

Notes

Use organic lemons for better flavor. Straining the strawberry puree is optional depending on desired texture. For sparkling lemonade, replace 1 cup of water with chilled sparkling water before serving. Adjust sugar to taste, especially if using frozen strawberries or alternative sweeteners.
