  • ½ cup crumbled feta cheese (about 4 ounces)
  • ¼ cup chopped fresh dill
  • ¼ cup thinly sliced red onion
  • ½ teaspoon kosher salt
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 small garlic clove, minced (optional)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Wash and dry cucumbers. Trim ends and slice into ¼-inch rounds. Place in a colander.
  2. Sprinkle kosher salt over cucumber slices and toss gently. Let sit for 10 minutes to draw out moisture.
  3. Rinse cucumbers briefly with cold water to remove excess salt. Pat dry with a clean kitchen towel or paper towels.
  4. In a small bowl or mason jar, combine olive oil, lemon juice, red wine vinegar, honey, minced garlic (if using), and black pepper. Whisk or shake until well combined.
  5. Slice red onion thinly. If sensitive to raw onion, soak slices in cold water for 5-10 minutes.
  6. Rinse fresh dill, pat dry, remove thick stems, and roughly chop to get about ¼ cup loosely packed.
  7. In a large mixing bowl, combine dried cucumber slices, sliced red onion, and chopped dill. Pour dressing over and toss gently to coat.
  8. Crumble feta over the top and toss gently again, or sprinkle on top for presentation.
  9. Let salad rest for 5-10 minutes before serving to allow flavors to meld.
  10. Serve at room temperature or slightly chilled. Garnish with extra dill and black pepper if desired.

Notes

Salting the cucumbers is essential to prevent a watery salad. For best texture, add feta just before serving. The salad is best eaten the day it’s made but can be stored in the fridge for up to 2 days; drain excess liquid before serving. For a vegan version, omit feta or use a vegan alternative.
