Fresh Caprese Skewers Recipe Easy Refreshing Appetizer with Balsamic Glaze

A light and refreshing appetizer featuring cherry tomatoes, fresh mozzarella, and basil leaves drizzled with a sweet and tangy balsamic glaze. Perfect for quick entertaining or a tasty snack.

  • 1 pint (about 250 grams) cherry tomatoes, preferably ripe and firm
  • 8 ounces (225 grams) fresh mozzarella balls (bocconcini), drained and patted dry
  • About 20 fresh basil leaves, washed and dried
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • ½ cup (120 ml) balsamic vinegar
  • 2 tablespoons brown sugar or honey
  • About 20 wooden or bamboo skewers, 4-inch (10 cm) length

Instructions

  1. Prepare the Balsamic Glaze: Pour ½ cup (120 ml) balsamic vinegar into a small saucepan. Add 2 tablespoons of brown sugar or honey. Place over medium heat and stir until the sugar dissolves. Let it simmer gently, stirring occasionally, until it thickens to a syrupy consistency that coats the back of a spoon (approximately 10–12 minutes). Remove from heat and let it cool.
  2. Prep the Fresh Ingredients: Rinse and dry the cherry tomatoes and basil leaves. Drain the mozzarella balls well and pat them dry with paper towels.
  3. Assemble the Skewers: On each skewer, thread one cherry tomato, followed by a fresh basil leaf (folded if large), then a mozzarella ball. Repeat until all ingredients are used. Lay the skewers on a serving platter.
  4. Season and Drizzle: Lightly drizzle the assembled skewers with extra virgin olive oil. Sprinkle with salt and freshly ground black pepper to taste.
  5. Finish with Balsamic Glaze: Using a spoon or a small squeeze bottle, drizzle the cooled balsamic glaze generously over the skewers.
  6. Optional Garnish and Serve: Sprinkle chopped fresh parsley or cracked red pepper flakes if desired. Serve immediately or refrigerate for up to 2 hours before serving. If chilling, add the balsamic glaze just before serving.

Notes

Dry mozzarella balls well to prevent soggy skewers. Let balsamic glaze cool before drizzling to avoid wilting basil. If glaze thickens too much, gently warm before use. Assemble skewers just before serving for best freshness.
