Fresh Burrata Toast with Heirloom Tomatoes

A quick and easy summer brunch recipe featuring creamy burrata cheese and vibrant heirloom tomatoes on perfectly toasted rustic bread, drizzled with olive oil and seasoned with fresh basil and sea salt.

  • 2 cups heirloom tomatoes, sliced
  • 8 oz fresh burrata cheese
  • 4 slices rustic bread (country-style sourdough or crusty baguette)
  • 2 tbsp extra virgin olive oil, for drizzling
  • A handful of fresh basil leaves
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Wash and dry the heirloom tomatoes gently. Slice them into roughly 1/4-inch thick slices and set aside.
  2. Toast the bread slices in a toaster or on a grill pan over medium heat until golden brown and crisp, about 3-4 minutes per side if using a pan.
  3. Take the burrata out of the fridge about 10 minutes before assembling to bring it to room temperature.
  4. Lay the toasted bread on a serving platter. Tear the burrata into chunks or gently spread it over each slice.
  5. Arrange the heirloom tomato slices on top of the burrata in overlapping layers.
  6. Drizzle extra virgin olive oil over the top, sprinkle flaky sea salt and freshly ground black pepper, and scatter fresh basil leaves across the toast. Drizzle balsamic glaze lightly if using.
  7. Serve immediately to enjoy the toast while the bread is crisp and the tomatoes juicy.

Notes

Bring burrata to room temperature before assembling for best creaminess. Toast bread just until golden and crisp to avoid sogginess. Slice tomatoes uniformly and handle gently to preserve shape and juices. Salt toppings after assembling to keep toast crisp longer. For gluten-free option, use gluten-free bread or toasted polenta slices. Balsamic glaze is optional for added sweetness and acidity.
