  • 1.5 cups frozen peas and carrots
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups low-sodium chicken broth
  • 0.5 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 sheet puff pastry (about 9x12 inches), thawed

Instructions

  1. Preheat oven to 400°F (200°C) and place a rack in the center.
  2. In a large skillet over medium heat, melt the butter. Add diced onions (if using) and cook for 2 minutes until soft.
  3. Add the flour to the skillet and whisk constantly for 1 minute to create a roux.
  4. Slowly pour in the chicken broth while whisking. Add heavy cream, garlic powder, thyme, salt, and pepper. Whisk until the mixture thickens slightly, about 3-4 minutes.
  5. Stir in the shredded chicken and frozen peas and carrots. Heat through for 2 minutes until hot and bubbly. Remove from heat.
  6. Pour the filling into a 9-inch square or round baking dish.
  7. Place the thawed puff pastry on a lightly floured surface and roll slightly if needed to fit the dish.
  8. Drape the pastry over the filling, press edges to seal, and trim excess.
  9. Slash the top of the pastry in a crosshatch pattern to allow steam to escape.
  10. Bake for 20-25 minutes until the pastry is golden brown and puffed.
  11. Let cool for 5-10 minutes before serving.

Notes

Keep the pastry cold until it hits the oven for maximum flakiness. If the filling is very hot, let it sit for 2 minutes before adding the pastry to prevent melting. For a deeper golden color, brush the top with an egg wash before baking. To prevent a soggy bottom, preheat the baking dish in the oven for 5 minutes before adding the filling.
