  • For the Honey Butter:
  • ½ cup unsalted butter, softened
  • 3 tablespoons honey
  • Pinch of salt

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin or line with silicone liners.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, sugar, smoked paprika, and cayenne pepper.
  3. Finely chop jalapeños and add to the dry ingredients along with the corn kernels.
  4. In a separate bowl, whisk eggs until light and frothy. Add buttermilk and melted butter; mix gently.
  5. Pour wet ingredients into dry ingredients and fold gently with a rubber spatula until just combined; batter should be lumpy.
