  • 810 slices deli turkey breast

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 12 tablespoons milk

Instructions

  1. In a medium mixing bowl, combine 8 ounces softened cream cheese with most of the ranch seasoning packet (reserve about 1 tablespoon for the dip). Stir until smooth and completely combined. Taste and adjust seasoning if needed.
  2. Lay tortillas flat on a clean work surface. If cold or stiff, microwave for 10-15 seconds to make more pliable.
  3. Using a spatula or butter knife, spread a thin, even layer of the ranch cream cheese mixture over each tortilla, going all the way to the edges. Aim for about 1/8-inch thick.
  4. Place 2-3 slices of turkey over the cream cheese, overlapping slightly to cover the tortilla. If using cheese, lay 1 slice on top of the turkey. Add a thin layer of shredded lettuce if desired.
  5. Starting at one end, roll the tortilla up tightly, using fingers to keep the filling tucked in. Roll all the way to the end and press gently to seal.
  6. Wrap each rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes (or 15 minutes in the freezer if in a rush).
  7. Unwrap the chilled rolls and place on a cutting board. Using a sharp knife, slice each roll into 1-inch thick rounds using a gentle sawing motion. You should get about 8-10 pinwheels per tortilla.
  8. In a small bowl, whisk together 1/2 cup sour cream, 1/4 cup mayonnaise, the reserved 1 tablespoon ranch seasoning, and 1-2 tablespoons milk until smooth. Add more milk for a thinner dip.
  9. Arrange pinwheels in a lunchbox or serving platter. Pack the ranch dip in a small container with a tight lid. Serve cold or at room temperature.
