This incredibly simple 3-ingredient slow cooker salsa chicken requires just 5 minutes of prep and delivers tender, flavorful chicken perfect for tacos, burrito bowls, salads, and more. A true set-it-and-forget-it weeknight dinner solution.

  • 1.5 to 2 pounds boneless, skinless chicken breasts (about 34 medium breasts)
  • 16 ounces jarred salsa (one standard jar, tomato-based)
  • 1 packet (about 3 tablespoons) taco seasoning
  • Half a medium onion, diced (optional)
  • 23 cloves garlic, minced (optional)
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Place chicken breasts in a single layer at the bottom of a 4-6 quart slow cooker.
  2. Pour the entire jar of salsa over the chicken. Do not stir.
  3. Sprinkle taco seasoning evenly over the salsa. Do not stir.
  4. Add optional diced onion and minced garlic if using.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is fork-tender.
  6. Remove chicken from slow cooker (or shred directly in the pot) and shred with two forks.
  7. Return shredded chicken to the slow cooker and stir to coat with sauce. Let sit on warm for 10-15 minutes.
  8. Serve warm in tortillas, over rice, on salads, or as desired.

Notes

For a thicker sauce, drain some liquid from the salsa jar before adding. For creamier version, stir in 4 ounces softened cream cheese during last 30 minutes. Chicken can be shredded with a hand mixer on low for finer texture. Season at the end as salsa and seasoning salt content varies. Leftovers keep 4 days in refrigerator or freeze up to 3 months.
