Ingredients

Scale
  • 1 lb (450g) ground beef (85/15 recommended)
  • 3 cups broccoli florets (about 1 to 1.5 inches wide)
  • 1/4 cup (60ml) low-sodium soy sauce
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon (15ml) sesame oil (for drizzling)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)
  • 2 tablespoons olive oil (divided)
  • Salt and black pepper to taste
  • Cooked rice (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the middle position.
  2. Line a large sheet pan (18×13 inches) with parchment paper or a silicone baking mat.
  3. Wash and dry the broccoli thoroughly. Cut into medium-sized florets (about 1 to 1.5 inches wide). Pat dry with a clean kitchen towel.
  4. In a large bowl, toss the ground beef with 1 tablespoon of olive oil, a pinch of salt, and a few cracks of black pepper. In another bowl, toss the broccoli florets with 1 tablespoon of olive oil and a pinch of salt.
  5. Spread the ground beef in an even layer on one half of the sheet pan. Spread the broccoli on the other half. Do not overcrowd the pan.
  6. Roast for 15 minutes.
  7. Remove the pan from the oven. Use a spatula to break up the ground beef into crumbles and flip the broccoli florets.
  8. In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Pour the sauce over the beef and broccoli. Stir gently to coat.
  9. Return the pan to the oven and roast for another 10-12 minutes, until the sauce is sticky and the beef is cooked through (internal temperature of 160°F / 71°C).
  10. Remove from the oven. Drizzle with sesame oil and sprinkle with toasted sesame seeds and sliced green onions.
  11. Serve over a bed of hot cooked rice. Drizzle any remaining pan juices over the top.

Notes

For extra crispy broccoli, broil for the last 2 minutes of cooking. Double the sauce if you like extra sauce. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat with a splash of water or soy sauce.
