A quick and easy pumpkin spice cold foam coffee bar that comes together in under 10 minutes, perfect for Halloween mornings or spooky brunches. This recipe skips complicated syrups and delivers creamy, frothy pumpkin spice flavor with simple ingredients.

Ingredients

Scale
  • 1/4 cup heavy cream, cold
  • 2 tablespoons whole milk, cold
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract, pure
  • 1 tablespoon powdered sugar
  • Pinch of salt
  • Strong brewed coffee or espresso (2 tablespoons grounds per 6 ounces water)
  • Ice cubes
  • Optional: Pumpkin spice syrup for extra sweetness
  • Optional: Orange food coloring
  • Optional: Black sanding sugar or edible glitter for rim decoration
  • Optional: Candy eyeballs
  • Optional: Cinnamon sticks for stirring

Instructions

  1. Brew your coffee (2 minutes). Make it stronger than usual — cold foam dilutes the flavor slightly. Use 2 tablespoons of grounds per 6 ounces of water. Let it cool slightly if serving over ice.
  2. Prepare your glasses (1 minute). Run a damp paper towel around the rim of each glass. Dip into black sanding sugar or orange sprinkles. Tap off excess. Set aside.
  3. Mix the cold foam base (2 minutes). In a small bowl or mason jar, combine 1/4 cup heavy cream, 2 tablespoons whole milk, 1 teaspoon pumpkin pie spice, 1/2 teaspoon vanilla extract, 1 tablespoon powdered sugar, and a tiny pinch of salt. Stir gently to combine the dry ingredients first — this prevents spice clumps.
  4. Froth the foam (1-2 minutes). Using a handheld frother, blend the mixture until it doubles in volume and forms soft peaks. You want it thick enough to sit on top of the coffee without sinking immediately. If using a mason jar, shake vigorously for about 60 seconds. The foam should look silky and hold its shape when you lift the frother.
  5. Add Halloween color (30 seconds). If you want orange foam, add 1-2 drops of orange food coloring and gently swirl with a spoon. Don’t overmix — you want a marbled effect, not a solid color.
  6. Assemble the drink (1 minute). Fill each glass with ice cubes. Pour the brewed coffee over the ice, leaving about 2 inches of space at the top. Slowly spoon the cold foam over the coffee, starting from the center and working outward. The foam should sit in a thick layer on top.
  7. Add decorations (30 seconds). Sprinkle a tiny pinch of pumpkin pie spice over the foam. Add candy eyeballs if you’re feeling playful. Insert a cinnamon stick for stirring.
  8. Serve immediately. The cold foam is best within 5 minutes of frothing — it will start to deflate and separate if it sits too long.

Notes

For best results, use very cold cream and milk straight from the fridge. Don’t over-froth; stop when foam looks like wet shaving cream. Spoon foam gently over coffee to preserve layers. The unfrothed cream mixture can be stored in the fridge for up to 24 hours. For dairy-free, use full-fat canned coconut cream (chilled overnight) and oat milk.
