These Easy Pumpkin Spice Baked Donuts are light, fluffy, and bursting with warm autumn spices. Made without frying, they come together in under 30 minutes for a perfect fall treat.

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¾ cup (180g) pumpkin puree
  • 2 large eggs (room temperature)
  • ⅓ cup (80ml) vegetable oil
  • ⅓ cup (80ml) milk
  • 1 teaspoon vanilla extract
  • ¼ cup (60g) unsalted butter (melted, for coating)
  • ½ cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your donut pan with non-stick spray or a little melted butter.
  2. In a medium bowl, whisk together 1 ½ cups (190g) all-purpose flour, ½ cup (100g) granulated sugar, ¼ cup (50g) packed light brown sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, 2 teaspoons pumpkin pie spice, 1 teaspoon ground cinnamon, and ½ teaspoon salt until well combined.
  3. In a large bowl, whisk together ¾ cup (180g) pumpkin puree, 2 large eggs (room temperature), ⅓ cup (80ml) vegetable oil, ⅓ cup (80ml) milk, and 1 teaspoon vanilla extract until smooth and fully combined.
  4. Pour the dry ingredients into the wet ingredients. Using a rubber spatula, fold gently until just combined. A few small lumps are fine. Do not over-mix.
  5. Transfer the batter to a piping bag or a Ziploc bag with the corner snipped off. Pipe the batter into each donut cavity, filling them about ¾ full.
  6. Bake for 10-12 minutes, or until the donuts are golden brown and a toothpick inserted into the thickest part comes out clean. They should spring back lightly when touched.
  7. Let the donuts cool in the pan for 2-3 minutes. Then, carefully turn them out onto a wire cooling rack to cool for another 2-3 minutes.
  8. While they are still warm, melt ¼ cup (60g) unsalted butter in a small bowl. In a separate shallow bowl, mix ½ cup (100g) granulated sugar with 1 tablespoon ground cinnamon.
  9. Working one at a time, dip the top and sides of each warm donut into the melted butter, then immediately dip it into the cinnamon-sugar mixture, turning to coat evenly. Place the coated donuts back on the cooling rack to set.

Notes

For best results, use room temperature eggs and milk. Do not over-mix the batter to avoid dense donuts. Coat donuts while still warm for the cinnamon-sugar to stick. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free milk and vegan butter.
