Easy One-Pot Crockpot Chili with Ground Turkey

A set-it-and-forget-it chili made with lean ground turkey, beans, and a blend of spices, slow-cooked to perfection. This hearty, healthy, and budget-friendly meal is perfect for busy weeknights and game day gatherings.

  • 1.5 pounds ground turkey (93/7 lean)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, sliced green onions, diced avocado

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Do not drain fat if using 93/7 lean turkey.
  2. Push the turkey to one side of the skillet. Add the diced onion and bell pepper; cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant. Stir everything together.
  3. Transfer the turkey and vegetable mixture to a 6-quart or larger crockpot.
  4. Add the undrained diced tomatoes, crushed tomatoes, drained and rinsed beans, chicken broth, and tomato paste. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne over the top. Stir well to combine.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. For best flavor, cook on LOW for 7 hours.
  6. About 30 minutes before serving, taste and adjust seasoning. Add more salt, chili powder, or cayenne as desired. If chili is too thick, stir in a little more broth. If too thin, cook uncovered for the last 30 minutes.
  7. Ladle into bowls and serve with desired toppings.

Notes

Brown the turkey first for best flavor and texture. For a thicker chili, mash some beans against the side of the crockpot or cook uncovered for the last 30 minutes. Leftovers taste even better the next day. Can be frozen for up to 3 months.
