  • 6 bone-in, skin-on chicken thighs (or boneless, skinless; reduce cooking time by 1015 minutes)
  • 1 cup wild rice blend (e.g., Lundberg brand; do not use instant rice)
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream (or half-and-half for lighter version)
  • 1 medium yellow onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced or sliced into half-moons
  • 34 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon paprika (smoked or regular)
  • Salt and black pepper, to taste
  • 2 tablespoons butter or olive oil (divided)
  • Optional: 1/2 cup sliced mushrooms, 1/2 cup white wine, pinch red pepper flakes

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Pat chicken thighs dry and season generously with salt, pepper, and paprika. Let sit at room temperature for 10 minutes.
  2. Heat 1 tablespoon butter or oil in a Dutch oven over medium-high heat. Sear chicken skin-side down in a single layer (work in batches if needed) for 4-5 minutes per side until golden brown. Transfer to a plate.
  3. Reduce heat to medium. Add remaining 1 tablespoon butter. Sautรฉ onion, celery, and carrots for 5-6 minutes until softened. If using mushrooms, add now and cook 3 more minutes.
  4. Add garlic, thyme, and rosemary; stir for 30 seconds until fragrant. If using wine, pour in and scrape up browned bits; let bubble for 2 minutes.
  5. Pour in chicken broth and heavy cream; stir. Add wild rice blend and stir to combine. Bring to a gentle simmer.
  6. Nestle seared chicken thighs back into the pot, skin-side up, slightly submerged. Cover with lid.
  7. Transfer to oven and bake for 50-60 minutes, until rice is tender and liquid is mostly absorbed. Check at 45 minutes; if rice is still crunchy, cover and bake 10-15 more minutes. Chicken should reach 165ยฐF (74ยฐC).
  8. For crispy skin, remove lid for last 10 minutes of baking. Otherwise, keep lid on.
  9. Let rest for 5-10 minutes after removing from oven. Fluff rice with a fork, adjust seasoning, and garnish with fresh parsley or thyme if desired.

Notes

Don’t skip searing the chickenโ€”it adds deep flavor. Let the pot rest after baking to allow the sauce to thicken. If rice is still crunchy after an hour, add a splash of broth and bake 10-15 more minutes. Season in layers for best results.
