  • 4 salmon fillets (about 6 ounces each)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 large lemon (juice and zest)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Let salmon sit at room temperature for 10 minutes. Pat dry with paper towels.
  2. Season salmon generously on both sides with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  4. Sear salmon skin-side down for 4 minutes without moving.
  5. Flip salmon and cook for 2 more minutes on the flesh side.
  6. Reduce heat to medium. Add butter, minced garlic, and lemon zest. Swirl pan to combine.
  7. Add lemon slices around salmon. Transfer skillet to oven and bake for 5-7 minutes (5 for medium-rare, 7-8 for well-done).
  8. Check doneness: salmon should flake easily with a fork and reach 125°F (52°C) for medium-rare or 135°F (57°C) for medium.
  9. Remove from oven. Squeeze remaining lemon half over salmon, sprinkle with parsley and red pepper flakes. Let rest 2 minutes before serving.

Notes

Pat salmon dry for best sear. Don’t overcrowd the pan. Add garlic after reducing heat to prevent burning. Let salmon rest 2 minutes before serving. For dairy-free, use ghee or vegan butter.
