  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 1/2 cup diced ham or crumbled cooked bacon (optional)
  • 1/2 cup diced vegetables (bell peppers, spinach, or zucchini)
  • 2 tablespoons pumpkin puree (optional, for color and flavor)
  • Salt and black pepper to taste
  • 1/4 teaspoon garlic powder
  • Pinch of pumpkin pie spice (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place a 10-inch cast iron or oven-safe skillet on the stovetop over medium heat. Add butter and melt, swirling to coat the pan.
  3. Add diced ham and vegetables to the skillet. Sauté for 2-3 minutes until softened. If using spinach, add it last and wilt.
  4. In a large bowl, whisk eggs, milk, salt, pepper, garlic powder, and pumpkin puree (if using) until frothy.
  5. Pour the egg mixture evenly over the vegetables and meat in the skillet. Sprinkle shredded cheddar cheese on top.
  6. Transfer skillet to the preheated oven and bake for 15-20 minutes, until eggs are puffed and just set with a slight jiggle.
  7. Remove from oven and let rest for 5 minutes to allow eggs to set.
  8. Slice into wedges and serve warm.

Notes

For best results, shred your own cheese to avoid anti-caking agents that prevent smooth melting. Ensure vegetables are drained well to prevent soggy eggs. The recipe is naturally gluten-free, but check labels on cheese and meat. For a spicy kick, add jalapeños and use pepper jack cheese.
