  • 1/2 cup unsalted butter (melted)
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until mostly smooth with a few small lumps.
  3. Add melted butter, granulated sugar, and brown sugar to the bananas. Whisk vigorously until the sugar is mostly dissolved.
  4. Crack in the eggs and add vanilla extract. Whisk until well combined.
  5. Sprinkle flour, baking soda, salt, and cinnamon over the wet mixture.
  6. Gently fold the dry ingredients into the wet using a spatula or wooden spoon until just combined. Do not overmix.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes. Tent with foil if browning too quickly after 40 minutes. Test with a toothpick inserted in the center.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas with brown spots for maximum sweetness. Do not overmix the batter to ensure a tender crumb. Let the bread cool completely before slicing to prevent it from being gummy. Can be stored at room temperature for 3 days, refrigerated for 1 week, or frozen for 3 months.
