This easy one-bowl banana bread is a foolproof, comforting recipe that uses simple ingredients and no mixer. It’s moist, tender, and perfectly sweet, making your kitchen smell like home.

  • 3 large ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional mix-ins: ½ cup chocolate chips, chopped walnuts, or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. For extra insurance, line it with parchment paper leaving an overhang on two sides.
  2. Mash the bananas in your large mixing bowl using a fork or potato masher. You want them mostly smooth with a few small lumps for texture. Don’t over-mash them into a liquid — chunky is good here. It should look like a thick puree, about 1 ½ cups.
  3. Add the melted butter to the mashed bananas and stir until combined. The butter should be warm but not hot.
  4. Mix in the sugar, egg, and vanilla extract. Stir until everything is well incorporated.
  5. Sprinkle the flour, baking soda, and salt over the wet ingredients. Stir gently until just combined. A few streaks of flour are okay. Fold in any mix-ins at this point.
  6. Pour the batter into your prepared loaf pan and spread it evenly. Tap the pan on the counter a few times to release any air bubbles.
  7. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after 40 minutes, tent it loosely with aluminum foil.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use really ripe bananas (mostly brown with black spots) for best flavor. Don’t overmix the batter to avoid tough bread. Let the bread cool completely before slicing. For high altitude, add an extra tablespoon of flour and reduce sugar by a tablespoon. Room temperature ingredients matter.
