Easy No-Discard Sourdough Starter for Beginners

Learn how to make a sourdough starter without discarding any flour. This beginner-friendly method uses just two ingredients and produces a bubbly, active starter in about 7 days with minimal waste.

Ingredients

  • 100 grams all-purpose flour (unbleached preferred, like King Arthur Flour)
  • 50 grams whole wheat flour or rye flour (for first feeding only)
  • 100 grams filtered water (room temperature)

Instructions

  1. Day 1: In a clean glass jar, combine 50 grams whole wheat or rye flour with 50 grams all-purpose flour. Add 100 grams filtered water at room temperature. Stir vigorously until no dry bits remain. Cover loosely with a kitchen towel and set in a warm spot (70-75°F / 21-24°C). Mark the starter level with a rubber band.
  2. Day 2: Check for tiny bubbles. It may smell funky (like yogurt or sour socks). Do not feed yet. Stir once to incorporate any liquid on top.
  3. Day 3: Add 100 grams all-purpose flour and 100 grams filtered water directly to the jar. Stir well. Cover and return to warm spot.
  4. Day 4: Starter should show real activity, possibly doubling in size within 12 hours. Continue daily feedings of 100 grams flour and 100 grams water.
  5. Day 5-6: Continue daily feedings. Starter should double within 6-8 hours and pass the float test (a spoonful floats in water).
  6. Day 7: Starter is mature. It doubles consistently, smells pleasantly sour, and has a web of bubbles. Use in any sourdough recipe. To maintain, feed once a week if stored in fridge, or daily if kept on counter.

Notes

Temperature matters: 70-75°F (21-24°C) is ideal. If starter isn’t bubbling by day 4, move to a warmer spot. Use filtered water to avoid chlorine. If you miss a feeding, stir in any hooch and feed as normal. The starter can survive up to 2 weeks without feeding in the fridge. For long-term storage, freeze 50 grams on parchment paper.
