  • 2025 vanilla wafer cookies, broken into pieces
  • Lemon zest (optional)

Instructions

  1. Wash strawberries and blueberries gently. Hull and slice strawberries into thin pieces. Set aside.
  2. In a large bowl, beat 8 ounces of softened cream cheese on medium speed until smooth and creamy, about 2-3 minutes.
  3. Gradually add 3/4 cup powdered sugar and 1 teaspoon vanilla extract. Beat until well combined and smooth.
  4. In a separate chilled bowl, whip 1 cup heavy whipping cream until stiff peaks form, about 3-5 minutes on medium-high speed.
  5. Gently fold the whipped cream into the cream cheese mixture with a spatula using slow, deliberate strokes to keep it airy and fluffy.
  6. Start with a layer of vanilla wafers (about 20-25 cookies broken into pieces) at the bottom of your serving bowl.
  7. Add a layer of the cheesecake filling (about 1/3 of the mixture), followed by a layer of sliced strawberries and a handful of blueberries.
  8. Repeat layers twice more, finishing with fruit on top.
  9. Optionally, sprinkle a little lemon zest on the top layer of berries to brighten flavors.
  10. Cover the trifle with plastic wrap and refrigerate for at least 2 hours, ideally overnight.
  11. Spoon into dessert glasses or plates and serve chilled.

Let cream cheese sit out for 20 minutes before mixing if too cold. Chill mixing bowl and beaters before whipping cream for best results.
