These no-bake peanut butter oat energy bites are a quick, healthy snack that kids love. Made with simple pantry ingredients like rolled oats, peanut butter, and honey, they come together in under 15 minutes and are perfect for lunchboxes, after-school snacks, or road trips.

  • 1/2 cup creamy peanut butter (natural, no-stir kind preferred; Jif or Skippy work great too)
  • 1/3 cup honey
  • 2 tablespoons ground flaxseed
  • 1/4 cup mini chocolate chips (optional but highly recommended; use dairy-free if needed)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional mix-ins: shredded coconut, chia seeds, dried cranberries, or chopped nuts

Instructions

  1. Combine the dry ingredients. In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed, and a pinch of sea salt. Stir together with a spatula. If adding optional mix-ins like shredded coconut or chia seeds, add them now.
  2. Add the wet ingredients. Scoop in 1/2 cup creamy peanut butter, 1/3 cup honey, and 1 teaspoon vanilla extract. Measure the peanut butter accurately by packing it into the measuring cup and leveling it off.
  3. Mix until combined. Stir everything together with a spatula or spoon. At first it will look crumbly, but keep stirring and pressing the mixture against the sides of the bowl. After about a minute, it will come together into a thick, cohesive dough. If too dry, add a teaspoon of honey or a splash of milk. If too wet, add another tablespoon of oats.
  4. Fold in the chocolate chips. Gently stir in 1/4 cup mini chocolate chips. Reserve a few to press into the tops of the bites later if desired.
  5. Chill the mixture. Refrigerate the bowl for 15-20 minutes to make rolling easier. This step is optional but recommended.
  6. Roll into bites. Line a baking sheet or plate with parchment paper. Using a cookie scoop or tablespoon, scoop out portions and roll them between your palms into smooth balls. You should get about 16-18 bites. Wet your hands slightly if the mixture sticks.
  7. Chill to set. Place the rolled bites on the prepared baking sheet and refrigerate for at least 30 minutes, or up to 1 hour for firmer bites.

Notes

For best results, use well-stirred natural peanut butter. If the mixture is too sticky, chill it before rolling. The bites can be stored in an airtight container in the refrigerator for up to 1 week or frozen for up to 3 months. For a nut-free version, substitute sunflower seed butter. For a vegan version, use maple syrup instead of honey and dairy-free chocolate chips.
