  • 2 large egg yolks (room temperature)

  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Place a baking sheet on the middle rack to heat up.
  2. Generously butter the inside of two 6-ounce ramekins. Dust them with cocoa powder (or flour), tapping out the excess.
  3. In a small saucepan over low heat (or in a microwave-safe bowl in 20-second bursts), melt the chopped chocolate and butter together. Stir frequently until smooth and glossy. Remove from heat and let cool slightly.
  4. In a medium mixing bowl, whisk together the 2 whole eggs, 2 egg yolks, and granulated sugar. Whisk vigorously for about 2-3 minutes until thick, pale, and slightly doubled in volume (ribbon consistency).
  5. Pour the melted chocolate mixture into the egg mixture. Gently fold together with a rubber spatula until just combined.
  6. Sift the flour and salt over the batter. Fold gently until no streaks of flour remain. Stir in the vanilla extract.
  7. Let the batter rest at room temperature for 5 minutes.
  8. Divide the batter evenly between the two prepared ramekins. The batter should come almost to the top.
