  • 2 boneless, skinless chicken breasts (68 oz / 170225 g each)
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons raw or wildflower honey
  • 3 cloves garlic, smashed or minced
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme or rosemary, chopped (optional)
  • 1 teaspoon freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine softened butter, honey, smashed or minced garlic, chopped thyme (if using), and lemon juice. Mix well until smooth.
  3. Pat the chicken breasts dry with paper towels. Sprinkle kosher salt and black pepper evenly on both sides.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. When hot, add the chicken breasts and sear for 3-4 minutes on one side without moving them until a golden crust forms.
  5. Flip the chicken breasts using tongs. Immediately spoon half of the honey garlic butter sauce over the chicken breasts.
  6. Transfer the skillet to the oven and roast the chicken for 12-15 minutes, depending on thickness. Check for doneness with a meat thermometer; it should read 165°F (74°C) at the thickest part.
  7. Halfway through roasting, baste the chicken by drizzling the pan juices and remaining honey garlic butter sauce over the chicken.
  8. Remove the chicken from the oven and let it rest for 5 minutes to redistribute juices.
  9. Serve warm with a drizzle of any leftover pan sauce.

Notes

If garlic starts to brown too fast, reduce stovetop heat before transferring to oven. Avoid overcooking to prevent dry chicken. Use a meat thermometer for best results. Butter can be replaced with ghee or coconut oil for dairy-free version. Maple syrup can substitute honey.
