  • 1.5 lbs (680g) salmon filet, skin removed
  • 1/3 cup (110g) honey
  • 1/4 cup (60ml) low-sodium soy sauce
  • 45 cloves fresh garlic, minced
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil
  • 1 tablespoon cornstarch
  • Salt and black pepper to taste
  • Optional garnish: sliced green onions, sesame seeds, red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly spray with cooking spray.
  2. Place the salmon filet on a cutting board. Check for pin bones and remove them. Cut the salmon into 1.5-inch bite-sized cubes. Pat the cubes dry with paper towels and season lightly with salt and pepper.
  3. In a medium mixing bowl, whisk together honey, low-sodium soy sauce, minced garlic, rice vinegar, sesame oil, and cornstarch until smooth.
  4. Add the salmon cubes to the bowl and gently toss until evenly coated. Let sit for 2-3 minutes.
  5. Transfer the salmon bites to the prepared baking sheet in a single layer with space between each piece. Reserve the excess glaze in the bowl.
  6. Bake for 8 minutes on the middle rack.
  7. Remove the pan from the oven. Flip each salmon bite and brush or spoon the reserved glaze over the tops.
  8. Return to the oven and bake for another 3-5 minutes, until the salmon flakes easily and the internal temperature reaches 125°F-130°F (52°C-54°C) for medium. Optionally, broil for the last 60 seconds for extra caramelization.
  9. Remove from the oven and let rest on the pan for 2 minutes. Transfer to a serving plate, garnish with green onions, sesame seeds, and red pepper flakes if desired. Serve immediately.

Notes

Pat the salmon bone-dry for best caramelization. Do not overcrowd the pan. Watch the broiler closely if using. Use room temperature ingredients for even cooking. Double the glaze if you like extra sauce.
